Crops, saplings, vines and similar blocks are updated by random ticks, which is what makes them grow, spread or pop off after a paste. Disable random ticks before pasting:
Command: /gamerule randomTickSpeed 0
randomTickSpeed does not affect these. Falling blocks drop when they receive a block update from a neighbouring block, so they stay in place while the schematic is being pasted and only collapse if something updates them afterwards — placing or breaking a block next to them, or a piston, water or explosion nearby.
If a section of your build collapses, paste that area again and avoid editing the blocks directly around it.
These break when the block they are attached to is missing. This usually means the paste was incomplete, so check that the whole schematic finished loading before assuming the build is faulty.
